Made with DOP Beekeepings Dartmoor honey, this Braggot
is given an extra long lagering period for a clean yeast profile to let this exceptional honey shine through with plenty of time for it to develop all of its delicate flavours and floral aromas.
Partnership
This collaboration is the perfect partnership between brewing and mead making techniques. Using brewing techniques to add extra malt character, and the technique of ‘Bochetting’ from Moonhoney Meadery to add rich caramelised honey flavour, this braggot is a perfect combination crafted by both sides
Balance
This Braggot aims to ascertain the perfect balance between dark
Light, joining the complex flavours of coffee, chocolate and liqourice from speciality dark, roasted malts along with the mixed berry floavours of guatamalan coffee, Locally roasted at Gaia Coffee in Paignton. All brought together with the light zesty and citrusy fruitiness of ethically sourced spanish orange blossom honey for its sweet and citrusy flavours.
Specials
Creativity I
The first in our Creativity range comes in the form of a treacle Baltic porter. Starting with a big malt bill largely comprised of dark malts, for coffee and liquorice flavours. Combined with a large amount of highly bochet, local Dartmoor honey for a blend of honey and treacle flavours. Then finished off with a healthy pitch of lager yeast for the clean yeast profile traditionally associated with a Baltic porter.
Locality
For this braggot we’ve managed to gather just enough honey from our own family hives, located in the south Devon country side that we are lucky enough to call home. We’ve then added it to a British IPA style malt base and a generous helping of Jester, Mystic, Harlequin and Ernest hops which are all grown here in the UK. All these ingredients are sourced from as close to home as possible, and combined give a lovely rounded sweetness from honey and malt followed by big stone fruit flavours from the hops. Hearth & Home
For this latest Braggot we have created our own variant of a traditional stjørdalsøl, which is a historical style of Norwegian farmhouse ale from the region of Stjørdal. the style is known for its hints of alder smoke flavour from its specific kilning of the malt and it’s fruity notes from the farmhouse Kviek (yeast). With its lovely red colour, we thought it would pair perfectly with our own honey from right here in the teign valley, after we slightly bochet it for a complimenting honey sweetness. Then lastly we added a small amount of juniper berries to replace the use of hops.
Pleasure
This braggot is a collaboration with our local bean to bar chocolate maker, Barbers chocolate in Stoke Gabriel. Guided by their extensive knowledge of all things cocoa, we used whole guatemalan cocoa beans, along with zingy sunflower honey for its citrusy flavour profile to recreate the complex flavours of a delicious bar of single origin
dark chocolate.
Creativity II
This Braggot is the second in our annual Creativity range. Starting with a malt bill designed to bring rich chocolatey flavours and a black as the night colour, we then added some HEAVILY bochet Dartmoor honey to bring a compliment of burnt treacle and slight citrus flavours to the brew. All of this finished off on a mead yeast to leave behind a lot of the delicate sugars to give a lovely rich finish. Designed to be enjoyed with friends in front of the fire.
